Ingredients

1 chicken breast, boneless  & skinless
2 cups flour
4 eggs beaten
2 cups of breadcrumbs
1 cup oil for frying
1 large baguette ( I used Cuban bread it's much softer)

For the garlic butter
1/3 cup melted butter
3 cloves of garlic, minced
1 tablespoon of parsley, chopped
1 tablespoon Parmesan, grated

Slice the chicken into 1-centimeter-thick strips
place flour, eggs, and bread crumbs into 3 separate bowls.
Roll chicken in flour dusting off excess then dip into the egg, then place into the bread crumbs coating it completely.
repeat with the following.
Heat the oil in the pan over medium heat. and preheat the over to 350 degrees.
Fry the breaded chicken strips until both sides are golden brown. remove from heat and drain on a paper towel.
Slice your bread into thirds or fourths.
hollow out the inside of your bread with a knife.
Lay two slices of mozzarella on top of each other with a 1 inch lap place a chicken strip. roll the chicken in the cheese.
Then push the rolled chicken inside your bread
I then put them in the shape of the loaf if it wasn't cut.
In a small bowl mix together ingredients for garlic butter
wrap foil over the bread and stick in oven and bake for 20-25 minutes until golden brown and cheese is melted.

Remove the foil and serve with marinara sauce.
